BLACK BEANS



F R I J O L E S  N E G R O S

500gr. black beans
1/2 Medium onion chopped in quarters
3 minced garlic cloves
Salt, do not add until fully cooked

 

P R E P A R A T I O N
 
Put the beans in a large pot and add enough water to cover by 5cm.
the beans will absorb the water, top it up if needed.
Soak the beans over night.
Do not put inside the fridge.
To cook, first discard the water the beans soaked in over night.
Put the beans in a pot covered by fresh water to cover by 2cm.
Add the onion and garlic.
Simmer for around two hours on medium heat.
Taste occasionally, cooking time will depend on the beans freshness.
The aim is to get the beans to a creamy texture.

Do not cover the pot with a lid while cooking.
